SHRIMP CAKES

5 oz small peeled shrimp, fresh preferred
1 tbsp butter
1 small onion, chopped
½ tsp garlic powder
¼ tsp paprika
salt and pepper to taste
1 tsp hot pepper sauce (optional)
1 egg ,beaten
2 tsp butter
½ cup milk
¾ cup flour
½ tsp baking soda
oil for deep frying

Method:

Pan fry shrimp with butter until shrimp just turns pink. Place shrimp in a bowl with seasonings, beaten egg, butter, milk, flour and baking soda. Mix together to make a thick batter. Heat oil to 365 deg farenheit. Using a tablespoon drop batter into hot oil and deep fry. Drain on paper towels. Serve with toast or crackers. Serves 6
