BEEF WITH GINGER

2 tablespoons soy sauce
2 1/2 teaspoons cornstarch
1 teaspoon vinegar
3 tablespoons vegetable oil
1 pound flank steak, cut thinly across the grain
˝ cup minced gingerroot
1 ˝ tablespoons chinese cooking wine
1 teaspoon sugar

Marinate beef slices with soy sauce, cornstarch, vinegar and 1 tablespoon of veg oil for about 30 min.

Heat wok or large skillet with remaining veg oil. Drain beef, then add to wok and stir-fry on high heat until beef is no longer red. Remove beef from wok or skillet- set aside. Add gingerroot to skillet or wok and stir –fry for 30 sec or so. Return beef to wok ,stir in sugar and cooking wine and cook for about a min .

Serve with veg and rice
