CARROT CAKE
(Recipe from Elizabeth)
Ingredients |

2 cups flour |
2 cups grated carrots |
1 ½ tsp. baking soda |
3 eggs |
2 tsp. baking powder |
1 cup oil |
1 ½ tsp. cinnamon |
½ cup pineapple juice |
2 cups white sugar |
8 oz. drained crushed pineapple |
½ tsp. salt |
½ cups walnuts or raisins |
Directions |

Sift all dry ingredients. Add oil, juice and eggs and mix well. Then add pineapple, carrots and walnuts. Combine thoroughly. Bake in 9" x 13" pan at 350 degrees for 40 minutes. |

Cream Cheese Icing (half of recipe is sufficient for 9" x 13" cake) |
|
8 oz. cream cheese |
½ cup soft butter |
2 tsp. vanilla |
1 pound icing sugar |
