CARROT CAKE (Recipe from Elizabeth)

Ingredients

 

2 cups flour

2 cups grated carrots

1 ½ tsp. baking soda

3 eggs

2 tsp. baking powder

1 cup oil

1 ½ tsp. cinnamon

½ cup pineapple juice

2 cups white sugar

8 oz. drained crushed pineapple

½ tsp. salt

½ cups walnuts or raisins

   

Directions

 

Sift all dry ingredients. Add oil, juice and eggs and mix well. Then add pineapple, carrots and walnuts. Combine thoroughly.

Bake in 9" x 13" pan at 350 degrees for 40 minutes.

 

Cream Cheese Icing (half of recipe is sufficient for 9" x 13" cake)

8 oz. cream cheese

½ cup soft butter

2 tsp. vanilla

1 pound icing sugar

 

Mix thoroughly with mixer.
